Has anyone ever tried making a fillet knife out of 52100 steel  ?

Yes and they do very well providing the owner takes care of his knife.
If you want the ideal fillet knife contact George Lambert, he is a member and you can email him, he makes titanium knives coated on one side with titanium carbides that do not rust.

I think I will make one from D2, 52100, L6 and S30V and see how each come out. I'll get back with you on the results.
