so while testing this knife sparks flew while chopping particle board.

That is very interesting, thanks for sharing!
There is a lot of force in a very small area when chopping, naturally heat would be a  consequence. I have not seen it, but can explain what we see.

I know that  particle is the dirtiest of the building woods. It has a lot of trash in it and it is not filtered. So any kind of hardened piece of steel could easily get into the wood.
